Curried Turkey and Rice Salad

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 3/4 tsp curry powder
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp cayenne
  • 3 cups cold cooked rice
  • 2 cups cooked turkey, cut up
  • 1 cup celery, sliced
  • 1/2 cup red bell pepper, cup up
  • 1 can pineapple chunks, drained
  • Salad greens
  • 2 med tomatoes, cut in wedges

InstructionsMix mayonnaise, yogurt, curry powder, ginger, salt and cayenne.  Set aside.  Combine rice, turkey, celery, pepper and pineapple.  Stir in dressing.  Cover and refrigerate for 2 hours or until chilled and flavours are blended.  Serve on plates lined with salad greens and garnish with tomatoes.
