Breast/Thigh Roast (60/40)
Our breast and thigh roast is raw, unprocessed, boneless, skin-on breast and thigh meat placed side by side, wrapped in a netting, and ready for the oven. We make them from 2-10 lbs, and the rule of thumb is approximately 1/2 lb per person.
Fresh or thawed:
Preheat oven to 325°F.
Place in roasting pan with a small amount of water and butter or margarine.
Season and cover loosely with tin foil.
Insert pop-up timer in the breast meat.
1 kg - 1.5-2.5 hrs.
2 kg - 2.5-3.5 hrs
3 kg - 3-3.5 hrs
4 kg - 3.5-4 hrs
Minimum internal temperature should be 170°F.
