| Turkey Beans'n'Greens Salad |

| 2 Cups | cooked turkey, cubed | 500 ml |
| 1/4 Cup | olive oil | 50 ml |
| 1 | each, green and red bell peppers, diced | 1 |
| 1 | tomato, diced | 1 |
| 1 | clove garlic, minced | 1 |
| 2 tbsp | finely chopped green onions | 25 mL |
| 1 Cup | cooked green beans, cut in 1" pieces | 250 ml |
| 3 tbsp | balsamic vinegar |

| 1 | can (19 oz. / 540 mL) chickpeas (garbanzo beans) - rinsed and drained | 1 |
In a large fry pan, heat oil and stir-fry peppers 3 - 4 minutes. Add tomato, turkey, garlic and onions, and stir-fry 1 - 2 minutes. Add green beans, balsamic vinegar and chickpeas. Place in salad bowl, season with salt and pepper to taste and garnish with fresh parsley, if desired. Preparation Time: 10 Minutes * Makes 6 Servings | ||
