Turkey Beans'n'Greens Salad

 

 2 Cups cooked turkey, cubed 500 ml 
 1/4 Cup olive oil 50 ml 
 1  each, green and red bell peppers, diced
 1 tomato, diced
 1 clove garlic, minced 
 2 tbsp finely chopped green onions   25 mL 
 1 Cup cooked green beans, cut in 1" pieces 250 ml 
 3 tbsp

 balsamic vinegar

 45 mL
 1 can (19 oz. / 540 mL) chickpeas (garbanzo beans) - rinsed and drained

In a large fry pan, heat oil and stir-fry peppers 3 - 4 minutes. Add tomato, turkey, garlic and onions, and stir-fry 1 - 2 minutes. Add green beans, balsamic vinegar and chickpeas. Place in salad bowl, season with salt and pepper to taste and garnish with fresh parsley, if desired.
