| 1/2 | Green sweet pepper, cut in strips | |
| 1/2 | Red sweet pepper, cut in strips | |
| 1 cup | Cherry or grape tomatoes, cut in half |

| l/4 cup | Fresh basil, chopped |

Mix together dressing ingredients. Cook pasta according to package directions. Toss pasta with 1/2 the dressing and set aside. In a large skillet over medium-high heat, heat oil; add turkey and stir fry with garlic and ginger until turkey is almost cooked through (3-4 minutes). Add green and red pepper; stir-fry 1-2 minutes. Add tomatoes and snow peas; stir-fry 30 seconds. Add pasta and remaining dressing; stir-fry 2-3 minutes or until warmed through making sure that turkey is no longer pink inside. Toss with basil and peanuts and serve on a bed of salad greens. |
