Turkey and Fruit Salad

 

 1 head leaf lettuce
 1 Cup melon chunks 250 ml
 1 Cup  pineapple chunks 250 ml
 1 Cup blueberries 250 ml
 1 Lb boneless Turkey Breast, cut into bite - size pieces 500 g 
 1 tbsp grated ginger root  15 mL 
 1 1/2 tbsp vegetable oil 20 ml 
 2 tbsp

lemon juice

 2 tbsp
 2 green onions, chopped

 2 t

  pepper to taste

Tear lettuce into bite size pieces and arrange on platter or in a salad bowl. Top with melon, pineapple and blueberries. Set aside.

Heat a non-stick pan over medium heat. Saute turkey and ginger root until turkey is no longer pink. Place turkey mixture over lettuce and fruit.

Combine 1 1/2 tbsp (20ml) of oil with lemon juice and pepper to taste. Drizzle over salad. Sprinkle with chopped onions. Toss gently to combine ingredients.
